45. Linguine Chicken Alfredo

Ingredients:

1 stick butter, softened

1 cup heavy cream

¾ cups grated Parmesan

4 boneless chicken breasts

2 tbsp. olive oil

1 chopped onion

1 chopped red pepper

¼ lbs. sliced mushrooms

1 tbsp. minced garlic

1 tbsp. Italian seasoning

1 (14 oz.) can chicken broth

½ lbs. dry linguine

3 cups frozen broccoli florets

Method:

1. Add together the first three ingredients in a bowl and set aside.

2. Heat the olive oil in the pressure cooker on the “heat” setting. Add the chicken and cook until evenly browned. Set aside.

3. Add the onion, mushrooms and peppers. Cook, stirring, for 3 minutes.

4. Add the garlic and herbs, stir and then deglaze the cooker with the broth.

5. Break the linguine noodles in half and add to the cooker. Add more water if necessary to cover the ingredients.

6. Put the chicken on top of the ingredients in the cooker. Close and lock the lid in place.

7. Set pressure cooker timer for 5 minutes.

8. Press the quick-release button and remove the lid.

9. Stir in the frozen broccoli then replace lid and set for 3 minutes more, then press the quick-release button.

10. Remove the chicken to a cutting board and stir the Alfredo sauce into cooker. Heat on the “heat” setting until heated through.

11. Serve the chicken on the linguine and broccoli.
